Thank you for organizing the first ever Fantastic Bake-a-Long Tracy @It’s a T-Sweets Day!
This was a lot of fun! Even though I just made the To Die For Blueberry Muffins last weekend I wanted to Bake-a-Long-Again!
I did change it up a little bit though.
I made Raspberry Lemon Muffins!
I used the exact same recipe but added the zest and juice of one large lemon and used fresh raspberries instead of blueberries.
****Special note on the blueberry muffin recipe – the batter will be VERY THICK!*****
They were very good – but not to die for. Unless you like your muffins a little on the tart and tangy side. Slap some honey and some butter on there and it’s all good!
I only ate half a muffin because I found them to be a little too tangy plus I have been low carb since January and I’ve almost reached my goal weight – but hubby who loves some tart fruit thought they were great! The next time I make these I will be increasing the sugar a little to balance the raspberry and lemon.

I LOVE tart! I’m going to have to try this. And I’m not a fan of blueberries, so raspberry lemon sounds perfect!

The batter will be very very thick Jan!! Don’t worry it’s supposed to be! Also these are Jumbo muffins so I baked them almost 10 minutes longer than the recipe calls for. 😀

Hi Joezette! The blueberry ones were amazing! Raspberry lemon were a little too tart for me, but still good. The recipe is actually pretty easy to whip up. It took me longer to make the crumb topping than anything else. 😀

Those look delicious! And I like tart, but like you I’m trying to reduce my carbs, so I will not get to try them out (there’s no one else here to eat them, unless I feed them to my Yorkie).

I’m lucky that hubby is more than happy to eat them all. I’m also glad that they were a little too tart for my taste – otherwise it would have been a very very difficult to resist! My trick for not eating most carby foods that I cook is to put onions in it – I hate them. Doesn’t work with muffins though LOL 😀

Hi Tami! A tart raspberry muffin looks FANTASTIC but me! I think some lemon curd on top would just really make this the ultimate tart treat! This has been so much fun:). I’m thinking something savory next month….we will see!❤️

Oh I would Yolanda but all of my cream cheese is currently reserved for the Carrot Cake with Cream Cheese Frosting that I’m baking tomorrow!!! 😀

Oh goodness – (hands Puff a tissue) wipe that up before you short out your keyboard! Your haunted oven would probably refuse to open its door to let you take them out so it could devour the muffins itself! By the way – I absolutely adore Cob’s blog!! She makes me laugh and makes me write the weirdest things!! I love it! 😀

Oh Margareta put your tupperware away dear. I wrapped some up in a picnic basket for you with a Thermos of hot cocoa for you to have before bedtime! 😀

Those look prett.y darn good Tami! I bet the lemon really added a kick since raspberries have their own bit of pucker power! This was so much fun!
